Winter Cress
Barbarea vulgaris Alien wildflower often seen in crop fields. Easily mistaken for Mustard but leaves are darker and glossy.

| Winter Cress leaves may be used in salads or cooked like spinach but they become bitter as the weather warms.
The flowerbuds may also be boiled and eaten.
In both cases the water should be changed 2 or 3 times to reduce the bitterness.
